Ingredients for Caprese-stuffed chicken recipe

For the chicken itself, we'll need large boneless, skinless chicken breasts, garlic powder, Italian seasoning, kosher salt, and black pepper. For the Caprese-style filling, gather fresh mozzarella, grated Parmesan, Roma tomatoes, fresh basil leaves, garlic powder, Italian seasoning, and kosher salt.

Step 1: Preheat the oven

Preheat oven to 400 F.

Remove the chicken from the oven and top each breast with fresh mozzarella slices, tomato slices, a fresh basil leaf, and a drizzle of balsamic glaze,

As great as this Caprese-stuffed chicken is, sometimes I like serving a cold variation of it in the summer, to better echo the fabled Caprese salad that serves as its inspiration. It's an easy adaptation, and I truly think it's sometimes even better than the original.

First, follow the steps of cooking this recipe. Then, when the chicken has fully baked, let it cool to room temperature, and refrigerate it uncovered for at least two hours or overnight. This helps everything meld together so that it no longer feels like a collection of separate components, and it also makes it easier to execute the rest of the stages.

Once the chicken has fully chilled, slice each breast crosswise into medallions about an inch thick. This showcases the melted filling and makes for a beautiful presentation that's great for a party. Arrange the medallions on a platter so that they're slightly overlapping. Then, layer thin slices of fresh mozzarella and tomato directly over the sliced chicken.
