Gather the ingredients for this loaded Cobb sandwich

To make the chicken for the sandwich, grab olive oil, garlic powder, smoked paprika, kosher salt, black pepper, and boneless, skinless chicken breasts. For the ranch dressing, you'll need mayonnaise, sour cream, buttermilk, fresh dill and chives, garlic powder, minced onion, lemon juice, and kosher salt.

To complete the sandwich itself, you'll need bacon, a large focaccia loaf, iceberg lettuce, Roma tomatoes, ripe avocados, purple onion, hard-boiled eggs, and crumbled blue cheese.

Step 1: Mix the seasoning for the chicken

Mix together the olive oil, garlic powder, smoked paprika, salt, and pepper.

Can I make this Cobb salad sandwich ahead of time?

First off, this entire sandwich can be made ahead of time and packaged for up to one day without impacting its flavor and freshness. As long as every piece of sandwich is wrapped tightly and all the sandwiches are stored in an airtight container, you shouldn't even have an issue with sogginess or discoloration and the flavor might even improve. This makes it perfect as a grab-and-go make-ahead lunch for work.

If you'd like to package it up in real time but make the components ahead of time, that's also very doable. The chicken and bacon can be cooked and refrigerated for up to two days ahead. You can even re-crisp the bacon in a dry skillet for a couple of minutes to give it the taste of peak freshness. Hard-boiled eggs are good for three days, and are a great cheat for your fridge anyway. The ranch dressing is the easiest thing to make ahead, and will actually improve after a few hours as the flavors have time to coalesce better. It can be stored for up to five days.

The two elements that will make the sandwich feel less fresh are the avocado and lettuce, which are best done right before packaging. The lettuce itself is the most precarious. I've used frozen avocados in sandwiches like this if making ahead, just giving them enough time to thaw after assembly.

What adaptations can I make to this Cobb salad sandwich?

Cobb salad is an institution in its own right, but there are some swaps we can make to customize it to your liking. The first one is swapping up the proteins. You can switch the chicken for sliced turkey breast, either roasted or deli-style, which makes for a lighter option that fits the same flavors. You can also use rotisserie chicken to make things even easier and faster.

On the cheese side, blue cheese is one of the building blocks of a Cobb salad, but I, for one, don't love it. I have used feta crumbled over the top, or even goat cheese for pungency and acidity. If you like blue cheese but want a less pungent flavor, gorgonzola dolce is a mild blue cheese that will still give a creamy, funky note, but with less force.

Another thing I like to play with is the bread. A large ciabatta loaf will be similar in flavor and texture, and can also be split and layered like focaccia. The crust is chewier, so keep in mind that it might get soggy. Sourdough slices will work for individual sandwiches, rather than a large one that you will slice into parts.
