Expertise
Recipe development and testing, Classic British baking, Professional baking technique explanations
  • With fifteen years in pastry kitchens behind her, Claire loves breaking down tricky baking techniques for home cooks. Especially anything involving texture, unusual ingredients, or classic British sweets.
  • She's tested countless dessert recipes over the years, including a brownie she perfected only after dozens of methodical, back-to-back trial runs.
  • A storyteller at heart, she brings the same care to explaining a sponge cake as she does to crafting a plot twist, usually with a dog curled up nearby.

Experience

Claire began her culinary career in a small bakery before attending pastry school in 2010 and has since built more than 15 years of experience as a head baker and pastry chef in the UK, Spain, and Canada. Leading small teams and creating seasonal menus gave her a solid grounding in recipe testing, ingredient knowledge, and everyday kitchen problem-solving. She shifted into content work in 2020, after returning to Europe during the pandemic and finding most kitchens closed. What began as a temporary detour quickly turned into a new career. She joined Insanely Good Recipes, where she moved from writer to editor and eventually managing editor, refining her eye for recipe development, clear instruction, and editorial strategy along the way. During that time, she launched her own food blog, Baked by Claire, and began an author career, publishing the thrillers "An Easy Target" and "A Broken Soul," the urban fantasy "Lightborn," and the romance novels "Three Nights in Stockholm," "Remodeling Romance," and "Handle with Care." She is now working on two more books—the zombie rom-com "Apocalypse for Two" and the Outback noir thriller "Thanks, Darl." Claire brings together her writing experience and years in the kitchen to infuse her Tasting Table articles with curiosity, clarity, and practical, real-world expertise.

Education

Claire holds an associate degree in baking and pastry arts from Suffolk County Community College, training that supported her work as a pastry chef and head baker across the UK, Spain, and Canada.
