Cold Stone Vs Baskin-Robbins: Which Chain Has The Best Ice Cream Cake?

Ice cream cake is an innovative and creamy take on the traditional cake. So, it only makes sense that innovative chains like Baskin-Robbins and Cold Stone Creamery would serve up their own slices of this delicious combo. Baskin-Robbins' 31 flavors and Cold Stone Creamery's Signature Creations prove both chains know how to celebrate tradition while fostering innovation. 

A dish or cone of these offerings will please the individual ice cream fan, but an ice cream cake is supposed to transform ice cream into a moldable, sturdy dessert that can be enjoyed by many people. Both chains promote their ice cream cakes as crowd-pleasing desserts, but I'm digging a spoon into each ice cream birthday cake to determine which one deserves a spot on the dessert table.

While both chains are popular and widely enjoyed, they have different yet similar focuses that helped shape the ice cream landscape. In 1945, Baskin-Robbins wanted to prove it could make delicious flavors that went beyond the traditional roster, and Cold Stone Creamery took a different approach by offering mix-ins incorporated on a cold stone slab, which is a mystery to many people. These different focuses were taken into consideration as I tried each cake, but I also created a list of criteria to evaluate the essential elements that any ice cream cake needs to succeed.

Methodology

Both cakes have layers of ice cream and traditional sponge cake. I am evaluating whether the sponge cake layer overpowers the ice cream layer and if both layers are of equal size. Ice cream is already very smooth and rich. So, I needed to make sure the sponge cake could match that smooth, rich texture by offering moist layers full of flavor. These layers should melt together in a way that evens out the overall sweetness factor while enhancing the creaminess of the ice cream.

The ice cream cakes were ordered through each chain's website the day before I wanted to pick them up. They were made with similar ice cream flavors, and I evaluated whether these ice creams offered the promised flavors. The consistency and overall durability were also taken into consideration by seeing how long it took before a slice of each cake started to melt. The cakes were decorated with frosting and plenty of decorations, which also received a durability test. I evaluated how these elements blended into the cake and ice cream layers to ensure they didn't overshadow the inside layers. So grab a spoon and a fork as I dig into how each ice cream cake stood up to these tests. 

Cold Stone Creamery Birthday Cake

Cold Stone Creamery's Birthday Cake doesn't include the mix-ins that go into the chain's Signature Creations, but it does showcase the company's emphasis on flavor. I purchased the 6-inch version of this birthday cake, which costs $44.99 at my store. It offers layers of sweet cream ice cream sandwiched between layers of devil's food cake, and the attention to detail is why the overall flavor is so enjoyable.

The devil's food cake is moist and has a soft bounce. The chocolate has a bitter yet sweet cocoa flavor that doesn't make the cake feel heavy, and it offsets the sweet cream ice cream, which highlights the unique richness of Cold Stone Creamery's ice cream. It tastes like a lightly sweetened whipped cream that has a decadent density. However, it never overpowered the chocolate cake. Instead, it blended into it, and I think it turned the cake into a recreation of a classic chocolate ice cream sandwich.

The rainbow sprinkles on the outside offer a garnish that has a subtle crunch while adding extra weight to each layer. The sprinkles withstand Cold Stone Creamery's white frosting, which was stiff while cutting but still melted in my mouth. Even after 20 minutes on the counter, this cake remained solid, and the thorough production process gave me time to enjoy each component at peak condition. This made it feel like an ice cream cake with a true cake consistency in each layer. 

Baskin-Robbins Celebration Party Cake

The outside of Baskin-Robbins' Celebration Party Cake is as classic as the layers inside, but it lacks real flavor and a satisfying consistency. A 6-inch version of this cake costs $34.99. Its thick buttercream frosting reminded me of a classic birthday cake, but this is the only bold flavor I noticed.

Like Cold Stone Creamery, Baskin-Robbins lets the customer choose the cake's ice cream flavor. I chose vanilla ice cream because it was supposed to closely match Cold Stone Creamery's sweet cream ice cream. However, Baskin-Robbins' vanilla ice cream has an extremely subtle flavor that is overtaken by a super sugary taste. Even though it was thick, it did not hold its shape. I set the cake on the counter for about 20 minutes, and the first slice started to melt about 3 minutes after cutting it. This took away from my ability to enjoy each layer separately. 

The confetti cake layer is smaller than the ice cream layer, and the cake had no flavor at all. This white cake with mixed-in sprinkles doesn't usually have much flavor, but I was expecting the synthetic sugariness of the sprinkles to shine through. That was not the case. The cake was extremely dense and felt like it had been overmixed or put in the freezer for too long during production. It's a subtly flavored cake that does not showcase the chain's flavor-focused mission.

Final verdict

While Baskin-Robbins' Celebration Party Cake is a decent one-note treat, Cold Stone Creamery wins this showdown because it fully develops each layer's flavor profile in a way that turns the cake into a nostalgic treat. When I ate the layers together, I could distinctly taste each flavor, and this left me feeling satisfied. I got to enjoy the moist, spongy layers of the cake before it melted into the sweet cream ice cream, which held its own against Cold Stone Creamery's stiff yet soft frosting. 

Unlike Baskin-Robbins' Celebration Party Cake, it took a while for a slice of Cold Stone Creamery's Birthday Cake to melt, and this gave me time to savor each layer on its own so I could better understand the individual flavors. Baskin-Robbins couldn't replicate this experience because of its fast-melting vanilla ice cream. This lack of attention to quality stopped this cake from becoming a satisfying experience. 

The combination of super-sweet ice cream and super-dense confetti cake made Baskin-Robbins' Celebration Party Cake feel extremely unbalanced and took away from my hope of multiple flavor profiles. While Baskin-Robbins may be a fan favorite for traditional ice cream, it needs to elevate the flavor of its cake and give its ice cream the stiff, cake consistency required to be a true team player in this dessert. Cold Stone Creamery's Birthday Cake wins because of its attention to detail, which proves that the chain can make compelling desserts of any shape and size.
