As common as bologna sandwiches once were, they're now a somewhat maligned food. Still, it's hard to turn one's nose up at fried bologna. Crisp edges caramelize the otherwise mundane deli meat with charred notes, enlivening it the way a grill turns a raw, hatchmarked hot dog into something far more delicious. To finish a fried bologna sandwich with a surfeit of style, though, try topping it with another Southern specialty: pimento cheese.

For those unfamiliar, pimento cheese is a soft spread typically made with grated cheddar, mayonnaise, and sweet, red pimento peppers. From that base, the traditional pimento cheese recipe can diverge, with other variations adding cream cheese, spices, herbs, bacon, and all sorts of other adjuncts to lend the mixture both aroma and depth. Since it is often served in sandwich form on white bread anyway, it isn't hard to see how this spread would pair perfectly with fried bologna.

The fried bologna sandwich is a Southern classic, and so too is pimento cheese. Stuff them together between two bread slices, and a sandwich is created that speaks to generations of regional comfort food. The crisp, salty bologna is offset by the creamy, sweet, and tangy pimento cheese, offering a bit more balance to their respective notes. The results are tender enough to make a tea sandwich with a delicate bite and a mighty wallop of flavor.

Make fried bologna and pimento cheese sandwiches even more Southern

Pimento cheese and fried bologna are not the only unique sandwiches of the American South, but they do cover a lot of ground there. There are a few choice ingredients, however, that can bring out the highest levels of Southern charm in this snack. For starters, white bread is key. Fancy breads might be appealing, and sourdough would certainly be delicious, but a sweet, fluffy white bread is the most Southern choice. It's also a good complement to both of the chosen fillings.

Considering these sandwiches are already stuffed with two regional classics, there's also an invitation to bring in a third and complete the Southern trifecta. A good tomato straight from the garden is one of life's greatest pleasures, and they are often appreciated best in the simplest form — the tomato sandwich. These bites do, however, sometimes welcome a bit of cheese. Tomato sandwiches with pimento cheese are an excellent pair, and a slice of crispy fried bologna can only make them better, adding savory layers of salt and umami to the mix.

Each of these sandwiches works as a Southern-inspired creation on its own. Fried bologna on white bread with mayo is delicious, and so is a garden-fresh tomato with just a sprinkle of salt and pepper. Take those two and add the intricate flavor array of pimento cheese, and the result is a delicious, complete sandwich that, frankly, couldn't be more reminiscent of the American South.
