Why she killed it in 2015: More than a decade after the launch of her well-loved Asian-inspired restaurant, Lantern, James Beard Award winner Reusing has brought her culinary talent to Durham, opening a restaurant in boutique hotel The Durham. Here, her cooking is inventive American with a Carolina focus, helping prove that hotel restaurants can be destinations in their own right.

What's the best and worst advice you've gotten from a mentor? "Best: Look with your hands, not your eyes. Worst: Never apologize."

Who is your food god? "Diane Kennedy. She's fearless, unrelenting, always right and like a god, terrifying."

Do you have a secret talent? "Total recall of Dylan lyrics pre-1976."

What's your favorite kitchen scar? "A burn I got on my wrist from hot oil when I was pregnant with my first kid. It wasn't a very bad burn, but it left a surprisingly bad scar. It's the closest thing I have to a tattoo."
