Aaron Silverman is launching a sophomore effort, as tasting menus are about to get big in the nation's capital. Here's where to eat in D.C. this season.

Pineapple and Pearls: Aaron Silverman made his name with Rose's Luxury, a casual spot that just may be the hardest table to score in D.C. For his sophomore effort, the chef's launching a coffee shop and café by day and a $250-a-head tasting menu concept in the evening. The dinner menu, which will debut April 7, hasn't been revealed yet, but the café is already open serving sandwiches, like one made from masa bread that's filled with egg hash and salsa verde, and sweets, like a pineapple sticky bun.

The Shaw Bijou: Eleven Madison Park alums Gregory Vakiner and Top Chef contestant Kwame Onwuachi, who met in culinary school, are working together to open a tasting menu restaurant in the Shaw, which, they say, will offer globally influenced American food. There are only eight tables in the former row home, so reservations (which will be taken through a ticketing service) may be hard to come by.

Whaley's: Cousins Nick and David Wiseman, the gents behind D.C. nouveau deli destination DGS (and newcomer Little Sesame), are expanding with a seafood restaurant in the Lumber Shed in the Navy Yard. The pair plan to serve Virginia oysters and environmentally conscious invasive species from the Chesapeake.

Métier: Another entry into the tasting menu category this spring is Métier from husband-and-wife team Eric Ziebold and Celia Laurent Ziebold. It's the more formal counterpoint to their restaurant Kinship, which opened in the same space upstairs late last year. With a James Beard semifinalist nod for Kinship already, hopes are high for this one.

All Purpose: The Red Hen team is paying homage to Italian American cooking and pizza at their new project. Here, the pies like the Cossimo—topped with black truffle, wild mushrooms, green onion and taleggio—will be made with a "bready" crust in deck ovens. Desserts like a rainbow cookie cake will come from Tiffany MacIsaac from Buttercream Bakeshop, which is opening next door.
