While a microwave excels at reheating certain items, we all know using it for leftover turkey can turn the remains of a Thanksgiving bird into the Sahara desert. You could use the oven, but preheating defeats the convenience of munching on leftovers, especially if you’re rushing out the door to get to a Black Friday sale.
Instead, our friends over at Cook’s Illustrated have a better idea:
Steam your leftover turkey.
Place your leftover turkey meat in a steamer basket over some simmering chicken stock. Clamp on the lid, and in a few minutes, the moist cooking environment will revitalize your turkey without drying it out. If you’re still hankering for crispy skin, after steaming, you can sear the meat in a lightly oiled skillet, skin-side down, for a minute or two. Your turkey will be as good as new, if that’s what you’re going for.
