Special "Enchiladas a-la-Taylor," filled with intriguingly spiced ground beef and topped with cheese of appropriately questionable origin, are the way to go. Don't look askance at the throwback "guacamole salad" of smashed avocado on a bed of shredded lettuce and tomato, its architectural spire of jutting celery ringed by a lone slice of onion.
