Anchorhead Coffee in Duvall, Washington, is throwing fresh Pacific Northwest hops into 20-hour-steeped cold brew for its Hopped Cold Brew ($16 for a four-pack). Though you may think combining IPA's main driver of bitter and earthy flavors with smooth, chocolaty cold brew might sound scary, this coffee is not bad, not bad at all.

We were skeptical at first, but after a few hesitant sips, the funky brew won us over, and soon we were imagining how lovely it would be spritzed with sparkling water—and, yes, tonic—or maybe a hit of whole milk. But the best thing about drinking this cold brew is you'll get that IPA punch without enduring the shame of cracking open a cold one before noon.
