Sparkling Cynar Cocktail Recipe

For the uninitiated, Cynar is a bitter and sweet liqueur made from artichokes, and while it's suitable for sipping on its own or with a little soda, the spirit is also great in cocktails. This recipe from Sother Teague, beverage director of NYC's famed bitters bar, Amor y Amargo, combines Cynar with grapefruit juice, rum and seltzer for an effervescent you won't be able to put down. It's bright, herbal and refreshing, so it's perfect for spring.

Poolside in Italy Cocktail

Recipe adapted from Sother Teague, Amor y Amargo, NYC

Yield: 1 cocktail

Total Time: 5 minutes


1 ounce Cynar

1 ounce dark rum

1 ounce grapefruit juice


3 to 4 ounces seltzer, chilled


Pour the first 3 ingredients into a highball glass. Fill the glass with ice, then top with seltzer and serve.
