The Secret to Juicy Chicken on the Grill
No matter how hard we try, sometimes the inevitable happens: We overcook chicken. It’s dangerously easy to do. The good news is when it comes to grilling, we have the secret to getting juicy chicken every single time.
Start by grilling chicken breast on the grill, then finish cooking it in the oven.
Flipping the chicken over and over on the grill results in overdone chicken on the outside and undercooked meat on the inside. By finishing it in the oven, the chicken is exposed to a stable and consistent source of heat and less likely to overcook.
① Before you fire up the grill, make sure to preheat the oven to 350°. Then turn the grill on high heat, letting it warm up.
② Lightly coat the grill grate and/or protein with the oil of your choice, so it doesn’t stick.
③ Place the chicken onto the grill and cook for 1 to 2 minutes on each side. If the grill is hot enough, the chicken will naturally release from the grates when it's ready.
Then place the chicken onto a baking sheet lined with parchment paper and pop it into the oven for 8 to 12 minutes. If you are using a thermometer to check the doneness, insert it into the thickest portion of the breast; it should read 160 to 165°. Remove the chicken from the oven and let it rest for a few minutes to allow the juices to settle.
