We've already extolled the virtues of breakfast for dinner, but sometimes you want to give eggs your undivided attention. You could hold off until the weekend and make an egg-filled brunch, but why wait? Take your dinner sunny-side up and put your eggs where they belong—on everything, that is.

① Drink: Ramos Gin Fizz

Sure, this one technically falls into the category of putting an egg in it, but we're letting it slide.

② Main Course: Leek and Pancetta Risotto with Fried Egg

Risotto may have a reputation for weighing you down, but this version from chef Darren McRonald will keep the spring in your step. Break the seal and watch the yolk runneth over in-season leeks and crispy pancetta.

③ Side Dish: Asparagus with Egg and Chorizo

It may read "side dish," but its bold flavors refuse to be sidelined: smoky chorizo on top, charred asparagus on bottom and smashed hard-boiled eggs in between. The blanket of egg-based sauce is reminiscent of gribiche, a cornichon-spiked cousin of mayo.
