Not feeling inspired by your usual dishes? Here's what's for dinner.

Adios, tomatoes and berries. November is here, and squash is taking the wheel with the arrival of giant blue Hubbards and thin-skinned delicatas. We love bright orange butternut for its sweet, nutty flavor and extreme versatility, so gather up a few and get ready to have a gourd time.

① Main Course: Butternut Squash Steak and Eggs
We're dedicated practitioners of the "put an egg on it" credo, and sweet-smoky planks of roasted squash are no exception. No, this dish doesn't taste like a medium-rare bone-in rib eye, but we're more than OK with that—especially once the runny yolk leaks over the caramelized squash.

② Side Dish: Butternut Squash with Marcona Almonds
Even if you're a fan of mashed potatoes, you'll find that this smooth butternut purée squashes the competition. A sprinkle of sweet Spanish almonds makes this silky side anything but one-dimensional.

③ Dessert: Winter Squash Bread and Butter Pudding
This comforting dessert has all the qualities that a fall dish should: cinnamon, squash, brown sugar and more cinnamon. If you resist eating all the spiced bread crumbs by the spoonful, they make a great seasonal sundae topping.
