Oh, brunch, how we love thee. A magical meal where you can eat breakfast and lunch at the same time, and it's perfectly acceptable to throw bourbon into your coffee. But nothing's better than bourbon with company, which is where the brunch party comes in. And when you're hosting said brunch party, you can bet your guests will be expecting eggs in some form.

As much as we love a good fried egg, we don't love the idea of how long it takes to make individual dishes for everyone. Luckily, we have the solution for having an egg-packed meal while still allowing time to catch up with your pals.

From a sweet, egg-soaked matzo concoction to an all-green-everything Persian omelet, here are seven egg dishes that will let you get an egg up on entertaining.

  • Savory Brei

Spring Pea and Arugula Matzo Brei
If sweet brunch dishes just aren't your thing, this savory take on matzo brei is sure to satisfy. We're also pretty sure this counts as a vegetable.

  • Bread Pudding

Winter Squash Bread and Butter Pudding
Bread pudding combines two things we love: sweet egg custard and thick hunks of bread. It's like French toast but in casserole form, so all your guests can get their custard on at the same time.

  • Kimchi Deviled Eggs

Spicy kimchi adds a modern twist to this retro party-time favorite. They make for a great passed appetizer that's anything but evil.

  • Kuku Sabzi

    Kuku Sabzi (Persian Herb Omelet)
The fragrant smell of more than four cups of chopped fresh herbs will have your guests flocking to the kitchen. Though it's traditionally eaten during Persian New Year, we think this fluffy egg dish is always in style.

  • Pickled Egg Salad

The briny pickling liquid does all the work a day ahead of time, so all that's left for you to do Sunday morning is mix everything together. Spice things up and toast a few different breads, so your guests can choose their own egg salad vehicle.

  • Scrambled Eggs

We've perfected the art of the scrambled egg. The recipe scales up easily, so get out your biggest pot and start stirring.

  • Sweet Brei

Cinnamon Sugar Matzo Brei with Roasted Apple Charoset
It turns out charoset isn't just for Passover—it also makes for a great egg topping. Double your egg fix with matzo brei, while giving egg matzo a soak in an egg bath.
