- A dedicated distance runner and overall fitness and outdoors enthusiast, Wendy was first drawn to plant-based eating inspired by vegan ultra athletes but found the eco-friendly and compassionate aspects even more compelling.
- As a former kindergarten teacher and especially a mom, Wendy enjoys playing with food and making "edible art" with kids; she and a teaching teammate self-published a family resource cooking and gardening book, "Plot to Plate: Grow, Cook, Create."
- Always up for experimenting in the kitchen, Wendy maintains a personal food blog, Happy Apple Vegan.

Wendy is a freelance writer, plant-based recipe developer, and food photographer who is passionate about promoting well-being and creating a nourishing community. She has written articles, newsletters, social copy, website content, and blog posts for outlets such as Longmont Magazine, myNOCO Magazine, Aging at Altitude, At Home Luxe, Raised in the Rockies, and the Longmont Ledger. She has created recipes and related content for various partners, including Good Karma Foods, and has been developing regular recipe packages featuring original recipes, blog posts, photos, and video clips for Organic India USA since 2018. With family on both sides of the Atlantic and a love for travel and adventure, Wendy is thrilled to continue to build and share knowledge about the latest foodie news.
Education
Wendy earned a bachelor's degree in English from Emory University, a master's degree in special education from the University of Hartford, and a master's degree in creative writing from the University of St. Andrews, Scotland.
