Apple season is one of the best times of year. Warming crumbles, piping hot pies, sweet jugs of cider –- the universally loved fruit presents endless possibilities, especially when it comes to baking. If you have oatmeal and almonds, you can even make a tray of easy apple pie bars, with no eggs or butter required.

These fruity bars are sweet, delicious, and relatively healthy thanks to the short ingredient list. All that is required is two peeled apples, less than one cup of oats, and less than one cup of almonds. The apples provide just enough sweetness to make this feel like a dessert without the addition of sugar, while the almonds and oats give the bars an earthy flavor and substantial texture. It's like a simplified, wholegrain version of apple pie bars without any fuss.

Old fashioned oats also have over 10-grams of protein per cup and they are a great source of fiber, as are almonds and apples. All three of the ingredients are packed with nutrients, making this a healthy snack to enjoy on-the-go or just when you're craving something sweet. Plus, they're vegan-friendly and suitable for anyone with allergies to eggs or dairy.

Making oat apple pie bars

To make the bars, just chop the apples and blend them with the oats and almonds in a food processor or high-speed blender. Then pour the mixture into a loaf tin or small baking tray and bake until golden. It should take about 30 minutes at 350 degrees Fahrenheit. Sweet apple varieties will provide the best flavor. Use Honeycrisp, Pink Lady, or Gala. Any type of almond works. Slivered, whole — whatever you have. Old-fashioned oats are best for a chewy texture.

You can amp these up further by adding some spices like cinnamon or nutmeg. Raisins or dates will add some chew and chocolate chips will create a more decadent treat. You could also drizzle the baked bars with melted chocolate or peanut butter for a rich finish.  Add honey for more sweetness. Vanilla would also provide a lovely flavor as would maple syrup.

If you don't have apples, feel free to use apple sauce. If you want more moisture and richness, try Greek yogurt or coconut oil. You really can make these your own — and if your craving isn't solved here's an easy apple pie recipe and Tasting Table's apple pie dessert pizza. They're a little less nutritious, but very delicious.
