The Admiral was a pioneer in the Asheville scene when it opened in 2007, precipitating the West Asheville neighborhood's transition from working-class backwater to hipster hamlet. And despite founding chef Elliott Moss's departure, a table here is still one of the hardest reservations in town. That's because the kitchen pumps out innovative courses that might include tempura-fried quail eggs with charred scallions and stinging nettle powder, and Hickory Nut Gap Farm beef tartare with cheddar, pressed apples and Sriracha aioli. True, the single-story cinder-block building isn't much to look at, and the dank interior may conjure memories of family suppers at the Western Steer, but that's all part of the charm—inventive, sophisticated food in a familiar setting.
