Magnus Nilsson Will Keep Fäviken Open Year-Round

Getting a dinner reservation at the remote Swedish restaurant just got easier

Dinner at Fäviken, Magnus Nilsson's acclaimed restaurant in Sweden, is not only a coveted meal, but one that requires hours of planning and travel (remember Nilsson driving into the snowy abyss in his Chef's Table episode?). The restaurant serves just 16 diners a night and has historically been closed from March to July. But starting next year, Nilsson will keep his restaurant open year-round:

In the past, Nilsson's allowed his staff to work on their own projects during those months—whether that's living in a monastery in Finland or studying methods for preserving eggs. But staying open in the spring will no doubt be an interesting journey for the crew, one that means testing a whole new crop of seasonal palettes and ingredients.
