Spiked Pink Lemonade Recipe

With millennial pink all the rage, we've been thirsty for our favorite nostalgic beverage: pink lemonade. This recipe takes a simple syrup and infuses it with raspberries, lemon zest and mint for a just-right hit of sweetness. Then, we add lemon juice, water and a generous pour of vodka for a batchable cocktail that will get summer started right.

While we love vodka, this lemonade would also be great spiked with gin, tequila, rum or any other clear liquor you fancy. If you want to go extra fancy, sub in Champagne for the liquor and add a few bubbles to the party.

Raspberries and lemon zest are combined with lemon juice, water and vodka for a refreshing cocktail you'll be sipping all summer long.

Ingredients
  • 4 cups water, divided
  • 1 cup sugar
  • 1 cup raspberries
  • Four 3-inch pieces lemon zest
  • 2 mint sprigs
  • Pinch kosher salt
  • 2 cups freshly squeezed lemon juice
  • 1 cup vodka
  • Ice, for serving
Directions
  1. In a small saucepan, combine 1 cup of the water with the sugar, raspberries, lemon zest, mint and salt. Bring to a simmer and cook until the sugar has dissolved and the raspberries have broken apart, 2 minutes. Remove from the heat and let cool completely, then strain into a pitcher.
  2. Add the remaining 3 cups of water, the lemon juice, vodka and ice. Stir until well chilled, then serve.
