You know what they say: If you can’t take the heat, then get out of the kitchen. But if you can, then you might as well add booze. Just as everyone has a go-to spirit, people feel strongly about their hot sauce of choice. Cholula fans will delight in the Torchlight at NYC bar Middle Branch, where the spice is balanced by a sweet honey syrup and a hit of lime juice.
The Torchlight (Tequila Hot Sauce Cocktail)

1 tablespoon honey
1 teaspoon water
2 ounces blanco tequila or white rum
1 ounce fresh lime juice
6 dashes Cholula
Pinch of cayenne pepper
1. In a small saucepan over low heat, combine the honey and water, and cook until the honey dissolves, stirring frequently. Remove from the heat.
2. Add the honey syrup, tequila, lime juice, Cholula and cayenne to a cocktail shaker with ice. Shake and pour over fresh ice in a rocks glass and garnish with a dusting of cayenne pepper and a lime wedge, then serve.
