Ingredients
  • Juice of 2 lemons
  • 1 tablespoon granulated sugar
  • 1 tablespoon water
  • 4 preserved lemon halves, pulp discarded and rind finely chopped
  • 1 small tart apple, peeled, cored and chopped into ΒΌ-inch cubes
  • 2 cups kosher salt
  • 12 oysters
  • 1 teaspoon nigella seeds
  • Good quality extra-virgin olive oil
Directions
  1. To a medium bowl, add the lemon juice, sugar and water and whisk until the sugar is dissolved. Add the chopped preserved lemon and chopped apple.
  2. To another medium bowl, add the salt and enough cold water to create the consistency of wet sand. Turn the mixture out onto a platter. Shuck the oysters (click here for a gif) and nestle each one into the salt bed. Top each oyster with a small spoonful of the preserved apple-lemon mixture. Sprinkle with nigella seeds and finish with a few drops of olive oil.
