Recipe: Curried Apple Mojito

A rum drink reboot with a hint of spice

Though the calendar is telling us it's all "back to school" this and "don't wear white" that, the weather is telling a different story. This cocktail is the perfect transitional drink: It evokes the spirit of the passing summer past while adding a warm spice to ease us into the approaching cool weather.

Ingredients
  • ½ cup green apples, diced
  • ¼ teaspoon curry powder
  • ¾ ounce Sugar in the Raw
  • ¾ ounce fresh lime juice
  • 2 ounces rum
  • 8 mint leaves
  • Ice
  • 2 ounces sparkling water
Directions
  1. In a cocktail shaker, add the apples, curry powder, sugar and lime juice. Muddle well, until the texture resembles a chunky applesauce. Add the rum and set the shaker aside for 30 minutes to 1 hour.
  2. Strain the liquid from the shaker into a separate container and discard the remaining pulp. Give the shaker a rinse, then add the mint and muddle. Add the strained apple-curry liquid to the mint, then fill the shaker with ice and shake well. Pour the liquid into a tall glass, fill to the top with more ice and top with the sparkling water. Insert a straw and serve.
