To us, these are the indications that fall is underway, and this cocktail celebrates both in all their glory.
We find that a rich, dark rum is the perfect match for crisp cider. Fresh lemon juice and orange bitters punch up the flavor, while amaro, that classic Italian aperitif, cuts the sweetness, leaving a spicy and slightly bitter flavor in its place. Topping it off with ginger beer adds just the right amount of spice for a cocktail that embodies the season.

1 ounce dark rum
½ ounce amaro (such as Nonino Amaro)
¼ ounce fresh lemon juice
2 dashes orange bitters
1 ounce apple cider
Ginger beer, to top
Lemon twist, for garnish
In an ice-filled cocktail shaker, combine the rum, amaro, lemon juice, bitters and apple cider. Shake vigorously and strain into a coupe. Top with the ginger beer and garnish with a lemon twist.
