Don’t know if you’ve heard, but not eating a lot (or even any) meat is all the rage right now. Which means that the once easily dismissed veggie burger has gotten an overhaul #trending.

Sorry, bland freezer ‘burgs (you know who you are), it’s become just too easy to find a great veg version these days, with places like NYC’s By Chloe slinging chips-and-guac-topped sweet potato burgers and companies like Beyond Meat putting their plant-based beet juice burgers for sale in the meat aisle. And it’s even easier to make your own.

Our ultimate veggie burger (see the recipe) is full of healthy quinoa and, true to its name, stuffed with five kinds of vegetables. Instead of looking like a dark slab of pretend meat (we’re looking at you, black bean burger), it’s light, bright and colorful, owning the fact that it is actually a burger made of vegetables. Once slathered with an herby green mayo and topped with tomato slices, avocado and microgreens, it’s hard not to feel like you’re living your best life.
