How to Make Spicy Sauerkraut Soup

This hearty, spicy sauerkraut soup is traditionally served during Christmas in Slovakia, but we think it makes for a simple, delicious warm-up all winter long. This recipe can be adapted to fit whatever ingredients you have on hand, and the best part? All you need is one pot to get the job done (see the recipe).

Hot paprika, fresh serranos and dried chiles keep you toasty, while onions, dried fruit and a sauerkraut brine add a salty-sweet edge. Add a few pounds of vegetables and hunks of dry chorizo, and this humble soup is enough for a full dinner.

With its bright-red hue, the finished product looks as welcoming on a cold winter night as a fire in the fireplace. Top a big bowl with sour cream and fresh-ground black pepper, and get cozy—it's looking like it's going to be a long winter.
