Sheet Pan Shrimp

Warm and hearty shrimp with vegetables

There is nothing better than pairing breezy, seasonally inspired meals with our newfound devotion to sheet tray dinners. Roasted shrimp and a warm asparagus-artichoke salad get combined with toasted bread hunks for a sheet tray shrimp-and-vegetables dish that delivers (see the recipe).

Once out of the oven, the warm salad is tossed quickly with mozzarella, basil and parsley. The heat softens the baby mozzarella balls just enough so they easily melt in your mouth and wilts the herbs lightly, perfuming the salad. Adding the vinaigrette at the last second keeps the toasted bread chunks crispy while they soak up the juices.
