New Orleans-Style Coffee Popsicles

Cool down with these popsicles inspired by the popular Blue Bottle NOLA cold brew

Few things are more synonymous with New Orleans than a pile of soft beignets and the requisite NOLA-style chicory coffee that is served with them.

During these last few weeks of blinding summer heat, however, we cannot fathom slurping down a hot mug of java even with the sweet promise of doughnuts as accompaniment.

So Blue Bottle’s New Orleans cold brew inspired us to figure out a way to turn our favorite regional caffeine jolt into a slightly sweet and, creamy coffee popsicle—NOLA-style. The only thing left is figuring out how to make those beignets appear.

Prepare the popsicles by pouring 1 to 2 teaspoons of simple syrup in the bottom of each popsicle mold (amount depends on how sweet you typically prefer your coffee). Add 1 tablespoon of half-and-half to each mold and top with cooled chicory coffee. We used about 1½ cups of cooled coffee for our popsicle mold which makes four 4-ounce pops. Feel free to adjust amounts to fit your mold.

Freeze popsicles until solid. To loosen easily, run the plastic under warm water, and serve.
