Cheesy Mashed Potato Muffins
Turn your lackluster leftover potatoes into a warm, cheesy treat
The day after Thanksgiving you're probably going to have mounds of cold, dry mashed potatoes taking up precious real estate in the fridge. Fear not. We have just the thing to put those sad lumps back to work.
Since we are firm believers that bacon and cheese make anything better, we added them and some other simple ingredients to a bowl of cold mashed potatoes. To finish off, we let a muffin tin and a hot oven do the rest.
