How to make two-ingredient banana pancakes

You no longer have to wait for the weekend to pencil in quality pancake time. This two-ingredient version can be made on the most manic of Monday mornings.

They take less than 10 minutes from start to finish, and there's no floury mess involved. Mash one medium banana in a bowl until it's the consistency of applesauce, then stir in two lightly whisked eggs. The batter will be runny, but don't worry: After a stint in your pan or on a griddle, it sets into a fluffy, potassium-packed meal. Spoon about 3 tablespoons of batter onto a sizzling hot pan and let cook for two to three minutes, until the edges are set but the center still jiggles. Using a spatula, carefully flip and cook the other side for another minute or two.

Once the pancakes are lightly browned and set in the middle, you're ready to devour a short stack of these two-ingredient miracles.

Well, three ingredients, really—maple syrup is a must.
