Mayonnaise may sound like an unusual ingredient for a grilled cheese. Slathered on a club? Sure. On a tuna sandwich? No problem.

But, yes, you should be swiping the outside of your grilled cheese with the creamy condiment before cooking it on a hot cast-iron pan to make sure you get a delectable, perfectly crisped sandwich. Because mayo has a (slightly) lower fat content than butter, it results in more even browning with a bit of crunch and nice, pleasant tang. Mayo, we thank you.
