Rumor has it we're going to hit the great pumpkin shortage of 2015. But it's more than halfway through October and the supermarkets are flowing with pumpkin-spice everything, so get started on this ultra fall menu before the shortage hits.
① Appetizer: Pumpkin Salad with Whipped Goat Cheese, Kale and Radishes
You may be used to seeing pumpkin spiced with cinnamon and nutmeg, but cumin makes a convincing argument here to redefine "pumpkin spice." Plus, the light-as-air whipped goat cheese might become your new favorite sandwich spread.
② Main Course: Calabaza Hash
Calabaza is so similar to pumpkin in both taste and looks that it may as well be the gourd's doppelgänger. Oven-roasted potatoes and fragrant rosemary join it on the stovetop for a dinner-appropriate version of the breakfast favorite.
③ Dessert: Pumpkin Custards
How do you solve the debate between graham cracker and traditional flaky crusts? Just leave 'em out altogether and bake the smooth custard in individual ramekins. Besides, there's nothing better than getting your own pie.
