Shaun Hergatt, formerly of SHO Shaun Hergatt, opens this 50-seat restaurant in the Hotel Chandler today with menu items such as Hudson Valley foie, Frog Hollow peach tartare and pistachio dust. Tasting menus are offered ($90 to $180).
