Scarpetta

Nina Compton is the new chef de cuisine at Scarpetta at the Fontainebleau Hotel in Miami Beach. Compton worked in the Scarpetta kitchen for several years; before that, she was executive chef at Casa Casuarina. She replaces Michael Pirolo, who departed to open Macchialina, the newest venture in the Pubbelly family of restaurants.
