This posh Soho sushi spot opens today (at 170 Mercer St.; 212-991-5650). It's working with the Marine Stewardship Council and the Monterey Bay Aquarium and will not serve bluefin tuna. Instead, look for sustainable options such as crispy Maine sweet shrimp with Sriracha.
