Get out the spray bottle for this red verjus-spritzed rum and port drink from [ONE] in Chapel Hill, NC.

Ingredients
  • 2 ounces aged rum, preferably Pyrat 'XO Reserve' Rum
  • 1 ounce Ferreira 20 Year Tawny Port
  • 2 dashes Angostura bitters
  • Red verjus, poured into a spray bottle
  • Orange peel
  • 3 golden raisins, soaked in red verjus for at least 30 minutes
Directions
  1. In an ice-filled mixing glass, combine the rum, port and bitters. Stir for 20 seconds, or until well chilled.
  2. Spray 4 spritzes of the verjus into a martini glass. Strain the rum mixture into the martini glass. Twist the orange peel over the drink to release its oils. Drop the twist, along with the golden raisins, into the drink and serve.
