French toast fried to perfection

During a trip to Bangkok, I was all about experiencing local breakfast culture and slurping up as much tom yum noodle soup as possible. One morning, however, I was encouraged to branch out and try the French toast, a Thai interpretation of the Western dish Americans know and love. In the Thai version, white bread is dipped into batter and fried in a wok before getting topped with a drizzle of sweetened condensed milk.

If you don't have a sweet tooth, try the savory version instead. Top a stack of the French toast with a fried egg, some soy sauce and chile oil, and you're set. Either way you go, this Thai French toast is delicious and unlike anything you've ever had.

Thai French Toast

Inspired by a trip to Thailand, this Thai interpretation of Western French toast starts with deep-frying white bread in a wok to golden perfection.

  • ½ cup whole milk
  • 2 eggs
  • ½ tablespoon granulated sugar
  • Pinch kosher salt
  • 4 slices white bread
  • 2 cups vegetable oil
  • Sweetened condensed milk, for garnish
  1. In a medium bowl, whisk together the milk, eggs, sugar and salt until combined. Pour the mixture into a shallow dish, then dip each slice of bread into the batter, stacking the slices and letting them sit in the dish while you heat the oil.
  2. In a wok, heat the vegetable oil to 325° and line a sheet pan with a wire rack. Working with 2 slices at a time, shake off any excess batter and fry, flipping once until golden brown, 1 to 2 minutes per side. Transfer each slice to the prepared sheet pan to drain.
  3. Divide the French toast between plates and top each piece with a heavy drizzle of sweetened condensed milk, then serve.
