Spike Mendelsohn's new We, The Pizza breaks from the traditional Neapolitan formula with an all-American menu concept: D.C.-style pizzas, and drinks inspired by the old-fashioned soda fountain.

This new Hill restaurant serves whole pies ($16) and slices ($3 to $4) with nicely puffed crusts and plenty of luxe toppings: Wild mushrooms with truffle oil, pancetta and roasted potatoes, and artichokes with sautéed spinach are among the most popular.

Pair any slice with one of the whimsical, summery sodas ($3 each), made with the staff's fresh purees and syrups.

Very, Very Sour-ry Cherry mixes muddled sour cherries with mint for a slightly tart soda that is all-too-easy to drink with richer meat pies.

Jupina Pineapple has enough coconut to add a frothy finish, and a touch of cilantro to cut the sweetness. Don't Forget Your Ginger Roots is like drinkable candy with real ginger heat that obliterates its commercial competition.

Mendelsohn starts his day with the Good Morning Vietnam Coffee soda, finished with a splash of sweetened, condensed milk. It's a blend of fizz and caffeine so perfect it should inspire its own takeout window.
