There is a bit of a trick to always making sure you are buying the best fresh raspberries. When you select them, simply flip the carton over and see if any of the berries stick to the bottom. That way, you'll be able to identify if any of the berries have gone past their best-by date and become mushy. 

Make the raspberry jam

  • 1 pound raspberries, fresh or frozen
  • ⅔ cup + 4 tablespoons sugar, divided
  • 2 teaspoons vanilla extract, divided
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • ½ cup butter, room temperature
  • 1 large egg, room temperature
  • ¼ cups plain flour
  • 1¼ cups oats
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  1. Place the raspberries into a small saucepan along with 4 tablespoons of sugar, 1 teaspoon of vanilla extract, 1 tablespoon of cornstarch, and 2 tablespoons of water. Cook for 5 to 10 minutes until the raspberries are broken down and jammy. Remove from the heat and set aside for 20 minutes until cooled.
  2. You can put the raspberry jam through a sieve to remove the seeds if you prefer seedless jam, though it isn't necessary.
  3. Preheat the oven to 350 F and prepare an 8x8 inch baking tin by lining it with parchment paper.
  4. Beat together the butter and ⅔ cup sugar in a stand mixer for a few minutes until it is pale and fluffy.
  5. Add the egg and the vanilla extract and then beat for another 30 seconds until they are well combined.
  6. In a separate bowl, add the plain flour, oats, ground cinnamon, and salt. Mix well.
  7. Stir the dry ingredients into the butter, sugar, and egg mixture until just combined.
