Insomnia's New Spring Cookie Comes In This Surprising Floral Flavor

Leave it to a college student to start a company called Insomnia Cookies that delivers warm cookies to your door into the wee hours of the morning. It's no surprise that the luxuries of dorm life, or lack thereof, make students miss the comforts of home, but it turns out that many people crave the cozy satisfaction induced by fresh baked goods. Insomnia Cookies delivers that feeling to your doorstep, and it just released new seasonal treats that feature the flavor of spring.

Seth Berkowitz founded Insomnia Cookies from his University of Pennsylvania dorm room in 2003, and since then, the company has expanded to over 200 locations across the United States. Insomnia delivers cookies, brownies, ice cream, cookie cakes, and even cold milk to wash it all down from 10 a.m. to 3 a.m. daily. Its menu options are available in-store, for local delivery, and can also be shipped within the U.S.

Insomnia has expanded its menu over the years to include vegan and gluten-free options, and added bestsellers like Chocolate Chunk and Red Velvet. And now, it's ready for spring as it releases new seasonal featured flavors with unique vernal ingredients to cleanse winter from the palate.

Insomnia's Hibiscus Berry Cookie ushers in a new season

Wide Open Eats notes that spring's signature flavors are sweet stone fruit, fresh greens, and tropical fruits with hints of citrus. Insomnia Cookies gives a much-needed nod to flowers, the ultimate indicator of spring, with its Hibiscus Berry Cookie.

Nothing says season of renewal like seeing flowers make their annual debut, and Insomnia features the unique floral flavor in its latest cookie. Prepared Cooks describes the taste of hibiscus as "tart and floral" with tangy fruit notes and a delicate aroma. Insomnia's Hibiscus Berry Cookie features those distinct flavors with an additional pop of dried cranberry and strawberry balanced with creamy white chocolate chips.

Insomnia Cookies also released its Lemon Poppy Seed Cookie, Hibiscus Berry Flower Cake, Lemon Poppy Seed Monster Sundae, and Hibiscus Berry Monster Sundae as its springtime offerings. The two new cookies are available in-store, for delivery to select addresses, and via nationwide shipping until April 4 while the cake and sundaes are available in-store only through that same date.
