Last week, we invited our first guest to the Test Kitchen and Dining Room, our kitchen sponsor PolyScience. President Philip Preston and Marketing Manager Christoph Milz paid a visit to show our editorial team some special tricks and tips. Our kitchen is lucky enough to be outifitted with PolyScience's Sous Vide Professional Immersion Circulator, Smoking Gun and Grant Achatz-inspired Anti-Griddle.

As home cooks and entertainers, we were already fans of sous vide cooking, as the method holds nearly-finished food at the perfect temperature for hours, without overcooking. Our new favorite cocktail trick we learned: Smoke water with the Smoking Gun, freeze the water into ice cubes and add to a glass of bourbon. Genius. We were also thrilled to see the Anti-Griddle in action.

After we sealed the salmon in an airtight bag, we programmed the easy-to-use time and temperature dial and cooked it in the controlled water bath. The salmon was moist and impossibly tender when it emerged.
