One Chef's Least Favorite Ingredient
We don't mind broccoli (in fact, we sort of love it)—but don't tell Tory McPhail, executive chef at Commander's Palace in New Orleans.
"I never serve broccoli. It's actually banned from all of our restaurants. For as popular as griddled cauliflower, kale and quinoa are, I'm hoping that broccoli never sits squarely on the hipster menu," McPhail says. "I'm a fan of cooking the ugly duckling vegetable up into the graceful swan, however, life is too short, and there are plenty of other great ones out there for me to waste my time on broccoli."
