It's possible to order nothing but starches at a South Indian restaurant–as much as we love rice-and-lentil crêpes stuffed with potatoes, we recognize they're not a balanced meal. The vegetable dishes on Dosa's menu are as varied as they are vivid: braised root-vegetable kofta (dumplings); a fennel, kale and carrot slaw with tamarind dressing; Brussels sprouts and squash sautéed with ginger, coconut and spices.
