Blue Bottle Coffee

Right now, Blue Bottle's cafes are carrying a rare treat: cascara from El Salvador. Instead of discarding the coffee fruit once it's separated from the bean, cult coffee grower Aida Batlle dries it to make a tea. With intriguing aromas of hibiscus, dried-cherry and guajillo chiles (but none of the spice), the cascara has the lightness of a good Yunnan and a surprising kick.
