Back in the 80s, someone had the brilliant idea to fill a taco-shaped waffle with ice cream, creating arguably the best example of fusion cuisine out there. Call it a stretch, but when you think about it, a Choco Taco is a distant cousin of mole, only frozen. Thirty years later, bloggers and restaurants around the country are showing their love for the old-school ice cream truck staple.
