There's something inherently comforting about eating dinner with a spoon. Maybe it's because said dinner is often a bowl of cereal (guilty) or ice cream (guilty again), but we always love the way a good stew packs all the necessary food groups into each spoonful. The weather may be slowly warming up, but there's still plenty of time to enjoy a soothing meal before it's 100 degrees and we ban the use of any and all heat-producing appliances. Pour yourself a cocktail tonight and enjoy a dinner of artichoke dip toasts alongside a bowl of chickpea and lentil-packed Moroccan stew.

Whether you're a vegan or not, this stew satisfies. Although stews usually take a while to cook, with no meat here to tenderize, all you need is half an hour to let the flavors meld. What it lacks in animal product, it more than compensates for with warm Moroccan spices and protein-packed legumes.
