Ingredients
  • For the Ube Infusion
  • 1 ounce ube extract
  • 1 liter simple syrup
  • For the Acidulated Pineapple
  • 1 liter unsweetened pineapple juice
  • 40 grams citric acid
  • For the Cocktail
  • 1½ ounces rum
  • ¾ ounce ube infusion
  • 1 ounce acidulated pineapple
  • Pineapple slice, for garnish
Directions
  1. Make the ube infusion: Stir the ube extract and simple syrup to combine. Set aside.
  2. Make the acidulated pineapple: Stir the pineapple juice and citric acid until fully dissolved. Set aside.
  3. Make the cocktail: Add all the ingredients to a cocktail shaker. Shake and strain into a rocks glass over ice. Garnish with a pineapple slice and serve.
