Ingredients
1 ounce ube extract
1 liter simple syrup
1 liter unsweetened pineapple juice
40 grams citric acid
1½ ounces rum
¾ ounce ube infusion
1 ounce acidulated pineapple
Pineapple slice, for garnish
Directions
Make the ube infusion: Stir the ube extract and simple syrup to combine. Set aside.
Make the acidulated pineapple: Stir the pineapple juice and citric acid until fully dissolved. Set aside.
Make the cocktail: Add all the ingredients to a cocktail shaker. Shake and strain into a rocks glass over ice. Garnish with a pineapple slice and serve.
