New Salt & Straw Ice Cream Features Bone Marrow Fudge

Bone marrow is the kind of delicate ingredient that makes everything richer. Whether you're topping your steak with bone marrow butter or simply serving it roasted on a slice of hearty bread, the bone marrow makes everything more decadent. So why can't it bring a little fatty richness to the dessert field? 

A new ice cream flavor debuting on March 9, 2023, hopes to accomplish just that with a ripple of bone marrow fudge. Combining the chocolate confection with rich bone marrow, it's the adventurous flavor crossover of two cult-favorite culinary brands: Hoppers restaurant in London, England, and Salt & Straw ice cream in Portland, Oregon. 

Hoppers, a Sri Lankan restaurant specializing in the classic comfort food of the island nation, first came on the scene in 2015 and has since won a Michelin Bib Gourmand award. But why is this esteemed British restaurant teaming up with an American ice cream chain? It's a cross-cultural celebration of the debut of Gokani's cookbook, "Hoppers: The Cookbook."

A rich, meaty twist to fudge ripple ice cream

Named after the Sri Lankan bowl-shaped flatbread with an egg at the bottom, Hoppers is the brainchild of Karan Gokani. Gokani, incidentally, is a fan of Salt & Straw ice cream. So when it came time to do some promotion for his new cookbook, Gokani turned to the Portland-based brand for a sweet melding of the minds. 

With that, the new flavor of Hoppers Caramelized Roti with Bone Marrow Fudge was born. An exotically sweet twist on two of Hoppers' most popular dishes, Bone Marrow Varuval and roti flatbread, this well-spiced pint with a base of toasted coconut ice cream will be offered on a first-come-first-serve basis starting March 9, 2023. 

For those looking for a little something extra, Salt & Straw is offering a full-blown collab pack online, with the limited edition flavor sharing space with Gokani's four favorite Salt & Straw offerings: Chocolate Gooey Brownie; Salted Malted Chocolate Chip Cookie Dough, Marionberry Coconut Sherbet, and Cloudforest Chocolate Ishpingo & Mango. In addition to the ice cream goodness, customers get a signed copy of "The Salt & Straw Cookbook" and Gokani's hot-off-the-press "Hoppers: The Cookbook."
