While you were hibernating this winter, restaurateurs and bar owners were burning the midnight oil to bring their latest establishments to life for this coming spring. From showy cocktail bars to reestablished classics, these are six of our favorite bars opening this season.
Bon Voyage!
(San Francisco, CA)
Bon Voyage! is only the second effort for the Trick Dog owners, despite the fact that they've collaborated with many of the area's leading cocktail bars. The team has taken over the former Urchin Bistrot location and is revamping the space with glittery flair reminiscent of Palm Springs in the 1970s. Expect delicious cocktails with a wildly creative menu concept.

(Denver, CO)
New York's famed speakeasy-style cocktail bar will open its second location in Denver's long-awaited Ramble Hotel. The Mile High iteration of the iconic brand will take over the hotel's grand lobby bar, courtyard, breakfast café bar and reservations-only cocktail lounge.
Kumiko
(Chicago, IL)
Julia Momose, formerly of Oriole and The Aviary in Fulton Market, will open a new Japanese-inspired omakase cocktail bar in the West Loop. The eight-seat spot will have a concise menu and serve a bartender's choice of 11 to 15 thoughtfully considered cocktails—not all of which will contain alcohol.
Camden Cocktail Lounge
(Las Vegas, NV)
As part of the $485 million renovation of the Palms resort, the hotel has installed this casino-level cocktail bar. Mixologist Eric Hobbie has created an extravagant drink menu filled with cocktails that focus on memorable and showy presentation.
Castalia
(Detroit, MI)
Detroit will welcome a fresh new concept from Kevin Peterson and Jane Larson of the perfume company Sfumato Fragrances. It's a cocktail bar that will serve aromatically enhanced drinks inspired by the duo's bespoke scents. The space cleverly changes from a perfume shop during the day into an 18-seat lounge at night, a new bar concept that is sure to change how people think about the correlation between aroma and flavor.
